Life does not always allow for an hour to throw together cookies but I have found the answer. Fresh, delicious, cookies in 20 minutes. Believe me, it's possible. And I'm not even sweaty.
Here's what you need:
1 bag of Betty Crocker Oatmeal Cookie Mix (yes, I know. That's why these are cheater cookies. I cheated!)
1 stick of unsalted butter, room temperature
1 Tbsp of water
1/2 tsp vanilla paste, or extract
1/4 cup of creamy peanut butter
1/3 cup cherry Craisins or plain ol' raisins
1/3 cup semi-sweet chocolate chips
1 bag of M&Ms
And here's what you do!
Preheat your oven to 375 F, please.
Throw a sheet of parchment on your baking sheet so that you don't even have to clean your pan. Mwahahahaha!
Plunk your softened butter into a bowl and use a spatula to mix it with a tsp of water, one egg, vanilla, and the peanut butter. Don't even haul out your mixer. Just use a spatula and keep this to one bowl, one spoon.
Once your wet ingredients are all blended, toss in the mix and give it a quick stir. No need to make sure it's perfect yet because we still need to put in the Craisins and chocolate chips. Mix them in so they are well distributed, but do try not to overmix the batter.
I use a cookie scoop to shape my cookies, but you can just use a spoon or roll them in your hands. Once you have a sheet full of these suckers, open your bag of M&M's and push a couple into the top of each cookie. This gives you the taste and crunch of M&M's in every cookie, plus they stay perfect and colorful. You eat with your eyes, man!
Bake for 12 minutes or so, it really depends on your oven. They are ready when the sides are light brown and you can tell they aren't jiggly in the middle anymore. It's 12 minutes for me.
That's it! 20 minutes to peanut-buttery, oat-y, Craisin-y delight. You can't beat it!
